This is in my top 3 favorite recipes. My mom used to make this in the summer when I was a kid and I just loved it. I used to call it summer spaghetti because that was when my mom made it. When I got married it was the first recipe I asked her for.

- 1 cup pepperoni slices
- 1/2 cup chopped onion
- 1/2 cup green pepper strips
- 7 ounces spaghetti, cooked and drained
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup chopped tomato
- 1/2 tsp dried oregano leaves
Fry the pepperoni in a large skillet until edges curl. Add onions and green pepper; Cook until tender.
Toss together cheese, tomato and oregano.
Add cooked spaghetti and pepperoni, onions and green peppers. Heat thoroughly. Sprinkle with addition Parmesan cheese if you desire.
4-6 servings
I like to double this recipe and have left overs for a few days. It can be a bit tricky to mix everything all together so use a nice big bowl will help.

- 1 Coffee Mug
- 4 tablespoons flour(that’s plain flour, not self-rising)
- 4 tablespoons sugar
- 2 tablespoons baking cocoa
- 1 egg
- 3 tablespoons milk
- 3 tablespoons oil
- 3 tablespoons chocolate chips (optional)
- Small splash of vanilla
Add dry ingredients to mug, and mix well . Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake
will rise over the top of the mug, but don’t be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
EAT! (this can serve 2 if you want to share!)
WARNING!! Be VERY careful to not over cook this cake. The first time I tried it I cooked it for the full 3 minutes and it was way to long. The next time I tried it I took 15 seconds off and it was better but still a bit long. I would try 2 minutes and twenty seconds. Of course it depends on your microwave but just something to remember. I think its a bit of a heavy cake but again it could be because I am over cooking it. Its a great kid dessert as well.
Who doesn’t like homemade bread? The next must in my option for making homemade bread is a bread machine. If you don’t have one I say get one. It took me some time to find a recipe that I really liked but I have been using this one for a few years and still love it.

- 1 cup warm milk
- 1/2 tsp salt
- 1 tbsp butter
- 3 cups floor
- 3 tbsp sugar
- 1 1/2 tsp yeast
Put ingredients in 1lb. bread machine in the exact order given. Start the bread machine. I use the sweet bread setting with the light crust setting but you can also use the regular bread setting. You may also use the rapid cycle on your machine. Because of the milk and butter it’s not recommended to use the delay cycle.
When measuring the milk I always fill a one cup glass measuring cup to the brim and then heat it for a minute in the microwave. Be sure to watch the dough as its mixing. You may need to add a little extra milk or flour to get the dough just right. You want the dough so its not sticking to the side as its mixing but still wet enough that its sticky to the touch. I will also ad its a good idea to let the bread cool a little bit before cutting so it does not go flat as your cutting it.
A few weeks ago I was going to make taco’s and I was looking for a easy and tasty cheese sause. The recipe I found also had a homemade taco seasoning so I gave it a try. The cheese sause was a bust but the seasoning turned out really well.

- 2 tsp. instant minced onion
- 1 tsp. salt
- 1 tsp. chili powder
- 1/2 tsp. cornstarch
- 1/2 tsp. crushed red peppers
- 1/2 tsp. garlic powder
- 1/2 tsp. ground cumin
- 1/4 tsp. oregano leaves
- 1 lb ground beef
- 1/2 cup water
Mix ingredients for Taco Seasoning and set aside in a small bowl. Separate ground beef and brown in a pan, drain all fat. Add the water and evenly shower the beef with the seasoning. Mix until distributed evenly and mixed thoroughly, then let simmer on low heat for 20 minutes.
The thing I like about making my own seasoning is you can add more or less of some ingredients for your taste buds. The first time I made it I thought it was a little too hot for me so this time I added less of the red pepper flakes. You could also make this in bulk and store it.
